Rosemary Grilled Chicken with Tomatoes & Arugula Recipe

 

Serves 4

Recipe Ingredients:

 

4 boneless, skinless chicken breasts

2 tablespoons fresh rosemary, finely chopped

2 cups arugula

1/2 pint grape tomatoes, sliced in half

2 tablespoons light balsamic vinaigrette dressing

 

Directions:

 

1. Spray a grill pan with cooking spray. Then season the chicken with rosemary, salt, and pepper on both sides and grill for 12 minutes. Flip the chicken halfway through cooking.

2. While the chicken is cooking cut all the grape tomatoes in half and place in a large bowl with the arugula. Then dress the tomatoes and arugula with the balsamic dressing.

3. To serve place the arugula and tomato salad directly on top of the chicken breasts.
